Unified Excellence
Executive Chef Arjan Speelman, Chef de Cuisine Mike Klaassen, and Service Manager Francesco Simonelli lead the passionate team at Celestial Blue. With their unique expertise and shared love for fine dining, they create an unforgettable immersive experience. Arjan Speelman officially holds the title of SVH Master Chef from 31 August 2025 and expanded his role as Bocuse d'Or coach by joining the board in July 2025.

Our team of sommeliers is led by SVH Wine Master Noël Vanwittenbergh and sommelier Niccolò Benigni, who will guide you through the selection. Chef Arjan Speelman and his team have once again retained two Michelin stars for Celestial Blue Restaurant. This restaurant known for its international cuisine has held this exceptional recognition since 2007. The inspector explains: "Celestial Blue lives up to its name immediately. Here you dine on the top floor of the luxurious Hotel Okura Amsterdam and have a spectacular view of the blue sky and the Amsterdam skyline. Wow! Arjan Speelman's kitchen is technical and creative. It is infused with global influences and spices. Every detail is precise, every bite a surprise."
